We are so fortunate to take part in this historical event. Obama’s win for this election not only brings new hope to the United States, but people all over the world.
Come on people now, let’s get together and try to love one another right now. No matter what our differences are. The world needs us to stand together and step forward to a new era! This is just the beginning of our chance to make things right again. Let’s do this together and help one another succeed in all the difficult tasks ahead of us.
DesertRatDan created a nice video on YouTube. I just wanted to share this with you.

Alum Creek State Park Mountain Bike Trail System Phase II

On the way to Columbus, Ohio from Moab Utah, I found out that there is a Phase II Bike Trail in Alum Creek State Park. The photos on SingleTracks shows lots of bridges and stunt obstacles. So we were excited to try out our new biked there. More about our adventure of the new bikes later.
Boy, it is lots of fun! Thanks to Central Ohio Mountain Biking Organization (COMBO) who built this 6-mile of fast, fun trail loaded with bridges and obstacles for you to test out balancing skills. It is advised not to ride Phase I and Phase II when the weather calls for rain. Wait at least two to three days for the mud to dry up before you ride or you can ruin the trail and it would be a pain to ride anyways.
The trail head is right across the street from the parking lot. A little short climb to get up and you want to turn right onto the trail. There is a pretty good obstacles built on the right shortly after you get on the trail. I have not tried it~ A little too advance for me. But I think Jeremy tried it. Need to get some video of that next time.
Another cool obstacle there was the see-saw. It was kind of sary for me to get on the first time, but after a couple of tries, it was quite fun! Here’s a photo of it and a short video of me trying it the second time.
There are so many cool bridges, but I was so focused on riding the trail and I forgot to take more photos. But I did take a video of Jeremy crossing the long bridge there. I rode this bridge twice now. It is quite scary the first time because of the height. But now I am getting used to it. Check it out.
Here’s the map to the parking lot for this trail. Do stop by and give it a run when you are in this area. It is fast, fun and gives any good mountain biker a good quick ride in a really beautiful park.

start of Teflon free cooking

I have been reading and learning a lot about cooking with cast iron cookware. Finally I decided to look on Craigslist in Columbus while we are here for cheap cast iron skillets. Lucky me, I found one lady selling her 4 cast iron pans for $35 total. That was a good deal, considering she really took great care of the pans and they are well seasoned and used so I won’t have to do all the prep work before using them.
Now I am replacing my Teflon non-stick pans with one 12-inch cast iron skillet, two 10-inch cast iron, skillets, one 6-inch cast iron skillet and one 10-inch cast iron griddle.
I think of this as a start to healthy and environmentally friendly way of cooking. When well seasoned, it is almost non-stick, so you won’t have to add too much oil to cook your food.
This morning, I made some breakfast with it using local produce and it was awesome. I think it will take me a while to learn the new way of cleaning my new pans, but, I think it won’t take me too long~
Here’s a list of benefits I come up for using cast iron cookware:
- Teflon free
- Increase daily source of iron intake
- Relatively cheap compared to most high-quality cookware
- Even heating surface for cooking
- Eco-friendly in production
- Lasts for generations
- Can be re-seasoned / re-conditioned to be used again and again
- Can be used on both the range and in the oven
The only down side of using cast iron pans is how heavy they are. But, this is a good way to work my forearms while cooking~
I think I am already loving the fact that I am cooking with them. I think I will have more info to share with you in the future when I learn to cook more with them.

Life is good… in Moab, Utah
Posted by jacq | Filed Under Mountain Biking, campground, lifestyle, rv, travel | 1 Comment
We finally got here around mid September. We are staying at the Spanish Trail RV Park & Campground. It is $595.00 for us to stay here for one month. The price includes electricity, full hookup, free wifi and cable TV. It is 3 miles south from downtown Moab.
The camp sites are nicely done with patch of grass, picnic table and a tree for shade. Drive ways were wide and easy to get in and out with big rig.
However, the wifi here is not always reliable… so having your own wireless internet solution on hand is good for full timers like us who work and play at the same time.
Our first mountain bike ride for this trip was the Moonlight Meadow. It was a really fun ride. Even though it really was tough for our out of shape selves… The scenery was beautiful and we got to ride a new trail! We had to drive up to the Trans La Sal Trail to park and start the long 5 mile climb up a gravel/dirt road to the Moonlight Meadow Trail head. Some people just have shuttle take them up there. But we wanted the whole experience.
Then we visited Circle O, a new trail that was added back in 2007 and then the Slick Rock Practice Loop. Both had been quite hard to get back into. But we are determined to get back in shape and get some good riding in.

We have tried quite a few places in Tulsa now in search of good food. Today, I think we found the best!
It is the Palace Cafe, located in the Tulsa historic Cherry Street. The food was awesome. Definitely a place that you should visit when you are in Tulsa. We loved everything we ordered.
I did not bring my camera this time, but I will deifinitely make sure to take some photos and share with you when we are back again.
Today we were here for dinner. I ordered the $15.00 Bento Selection. It was a sensational experience for my tasete buds. Every single item has full flavor that brings out the best of the ingredients, and the fact that they try to get ingredients from local supplier, everything is fresh and you can taste it in every bite!
Jeremy ordered the Grilled Atlantic Salmon and it was awesome too!
